Week 2

Its Monday and the start of my Week 2!

Day 8: I am doing fairly well on Day 8. I had some meat stock yesterday and still no noticeable symptoms, so I had about the same dose with lunch today and so far, so good. Today has come with some fatigue that I am really feeling in my legs, last night I had some strange pains on my right Quad muscle which is new. I didn’t do a great job of staying hydrated yesterday, so I am wondering if that is why,

For lunch today I braised some round steaks in Ginger and Basil, and it was delicious. That will definitely be a staple meal moving forward.

The anxiety around cooking and meal prep is subsiding and I’m getting more comfortable and confident in it. It REALLY helped that I did some meal prep and got about 7 frozen meals ready for days I am working in the office and can’t cook at home. We also picked up a big order of freezer beef, lamb, and turkey over the weekend.

Eating meat and veggies for breakfast has actually been really enjoyable. I am excited to introduce eggs again and add those to my breakfast. I had taken a food sensitivity test a few months back and eggs were the #1 food that came up so I have eliminated them and will likely introduce them again in a few weeks. Who knows how accurate or dependable these sensitivity tests really are, but I don’t mind keeping eggs out for now just to be cautious. What I’m doing now really seems to be working and I can feel the shift in my digestion, and I have this internal sense of healing.

I didn’t make many post updates through the end of Week 2 as the fatigue really kicked me on my ass and I was hit with some pretty terrible headaches. Some days were better than others but I spent a lot of this week on the couch.
