I can see the light this week and thank God for that!
Day 14: Its Monday and I am finally starting to feel better and less weak. I did start taking a B complex to help my body fully get into Ketosis so I am not sure if that is what is helping or if I am just finally getting past the initial detox symptoms and adjustment into Ketosis. Either way I sure am grateful to be feeling better. I am now at the point where I am drinking about a cup of Meat Stock, and I have introduced eggs in successfully. I now realize that I was stupid to listen to some food sensitivity test that I recently found out has a lawsuit against them for providing false information and that some of the foods they were claiming people were intolerant could be the foods they are actually tolerant to and vice versa. I clearly don’t have a problem with eggs, and I never have, but I let this stupid test make me believe I did. Now I get to enjoy my yummy eggs again and honestly that makes this diet a heck of a lot easier.
I have decided to completely cut out caffeine and only drink decaf coffee, I was noticing that I felt the worst of the fatigue after my morning coffee, and I would start feeling better in the afternoon. So, I trialed a day with no caffeine and wallah I felt better. I also ordered myself up some Chicory Root to start adding into my coffee for a little extra boost for my gut.
Day 15: I had to work in the office today and it was my best day out of the house since I started this diet. It was really hard last week to have to be in the office all day while I felt so terrible. But today I felt a steady flow of energy all day with no crashes, only a minor headache that didn’t last long.
I made a trip to Whole Foods looking for some beef tallow but of course they didn’t have any. I did grab myself some more Ghee and also some Fermented Beets and some Fermented Yogurt that I found that I can try out while I wait for my new Kefir grains to come in the mail. I had a tiny amount of the fermented beets with lunch, and I felt really great afterwards so that felt like a win. I had a spoonful of the yogurt with dinner and no reactions at all, another win for the day.
Day 16: I feel like a new person today. At Day 16 I can finally say my anxiety over this diet has completely diminished especially since I am feeling so much better. I had enough energy to get a good amount of cleaning and some food prepping done today. I started a batch of Fermented Carrots that I will let ferment for a week. I had a small amount of Chicory Root mixed in with my Decaf coffee this morning and had no reactions to that, so that was another win for the week. Tonight, I made a Brisket that came out really well for not being able to use the traditional seasonings and rubs. Just seasoned it with salt and that was it, I do feel like I crave meat way more now, all day I was really looking forward to eating the Brisket even though I have eaten so much beef in the last two weeks. It really is crazy how the bacteria in our gut can control our cravings, When I first started this, I thought the cravings were going to be the worst part, but I just really haven’t had many for things outside of the diet. The main thing I am looking forward to eating again is fruit, and some coconut flour pancakes.
I have been reading up on all the ways I can support my body through this and have been making a point to do a couple of things. I have been doing a castor oil pack every few days for about 40 minutes or so, dry brush before showers when I get the chance, and getting outside more and get sunlight in my eyes as much as I can (even though winter is now upon us).
